  • 1 cup frozen corn

  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1 1/2 cups green enchilada sauce

  • 6 corn tortillas, cut into wedges
  • 1 1/2 cups shredded cheese (cheddar, mozzarella, pepper jack, or vegan cheese)

Instructions

  1. Preheat the oven: Preheat your oven to 375°F (190°C) so it’s ready once you finish assembling the enchiladas.
  2. Sauté beef and veggies: Place a large skillet over medium-high heat. Add the cooking oil, then the ground beef, diced bell pepper, zucchini, and green onions. Break apart the meat and cook until the beef is browned and the vegetables have softened, about 7-8 minutes.
  3. Add spices and sauce: Turn off the heat. Sprinkle in chili powder, cumin, garlic powder, and oregano. Pour in the green enchilada sauce and stir in the black beans and frozen corn. Toss gently to combine all the ingredients.
  4. Stir in tortillas: Fold in the corn tortilla wedges until everything is well coated with sauce and mixed together evenly in the skillet.
  5. Top with cheese and bake: Sprinkle the shredded cheese evenly over the top of the skillet mixture. Place the skillet in the preheated oven and bake for 10–15 minutes until the cheese is melted and bubbly.
