Ingredients
Scale
Chicken and Seasoning
- 2 tablespoons oil (avocado or olive)
- 1 ¼ pounds chicken breast (pounded to 1-inch thick and cut into 5 pieces)
- 1 teaspoon salt (divided)
- ¼ teaspoon black pepper
Sauce and Toppings
- ½ cup butter (salted, divided)
- ¼ cup sweet onion (finely diced)
- 3 cloves garlic (finely minced)
- ¾ cup chicken broth (regular sodium)
- ¼ cup lemon juice (freshly squeezed)
- 7 ounces sun-dried tomatoes (julienned, drained)
- ⅓ cup fresh basil (chiffonade)
- 4 ounces goat cheese log
Instructions
- Prepare and Sear Chicken: Heat oil in a large skillet over medium-high heat. Sprinkle ½ teaspoon salt and ¼ teaspoon black pepper evenly over the chicken breasts. Once the oil is hot, place the chicken in a single layer and cook for 7 to 8 minutes, flipping halfway through, until the chicken is almost fully cooked and nicely seared on both sides. Remove the chicken from the skillet and set aside on a plate.
- Sauté Aromatics: Reduce heat to medium and add 2 tablespoons of butter to the skillet. After it melts, add finely minced garlic and diced sweet onion. Sauté for about 2 minutes until the onion becomes tender and fragrant.
- Make the Lemon-Basil Sauce: Pour in the chicken broth and freshly squeezed lemon juice into the skillet. Use a whisk to scrape any browned bits off the bottom, incorporating them into the sauce. Let this simmer over medium heat, whisking occasionally, until reduced by half, approximately 5 to 7 minutes. Reduce heat to low and gradually whisk in the remaining 6 tablespoons of butter one tablespoon at a time, stirring well after each addition. Stir in the remaining ½ teaspoon salt and the drained sun-dried tomatoes.
- Finish Cooking Chicken with Goat Cheese: Return the chicken breasts to the skillet. Top each piece with equal amounts of goat cheese. Cover the skillet with a lid and simmer gently for 4 to 5 minutes until the goat cheese melts and the chicken finishes cooking through.
- Serve: Pour the rich sauce over the chicken and garnish with extra fresh basil leaves if desired. Serve immediately for a flavorful, elegant meal.
Notes
- Pounding the chicken breasts to an even thickness ensures even cooking.
- Use fresh lemon juice for the best vibrant flavor in the sauce.
- Julienned sun-dried tomatoes add a slight sweetness and texture contrast.
- Serve with pasta or a fresh green salad to complete the meal.
- Goat cheese can be swapped for feta for a slightly different but equally delicious flavor.
