- ½ cup frozen peas

- 2 cups cooked chicken, shredded
Grains
- 3 cups cooked white rice
Oils & Sauces
- 2 tablespoons sesame oil
- 3 tablespoons soy sauce
- 1 tablespoon butter
Seasonings
- Salt, to taste

Instructions
- Sauté Vegetables: Heat sesame oil in a large frying pan over medium heat. Add diced onions and carrots, sautéing until they become tender and fragrant, about 3-5 minutes.
- Add Peas: Stir frozen peas into the pan with the onions and carrots, mixing well to combine and warm through for about 2 minutes.
- Cook Eggs: Beat the eggs in a small bowl. Push the cooked vegetables to one side of the pan, then pour the beaten eggs into the empty side. Scramble the eggs until fully cooked, then mix them with the vegetables.
- Combine Rice and Chicken: Add the cooked white rice and shredded chicken to the pan. Stir everything together until the rice and chicken are evenly combined with the vegetables and eggs.
- Season and Finish: Pour in the soy sauce and add the butter to the pan. Stir continuously until the butter is melted and ingredients are well coated with the soy sauce.
- Adjust Seasoning: Season the fried rice with salt and pepper to your taste. Mix well to incorporate the seasonings thoroughly.
- Serve: Serve the chicken fried rice hot, optionally drizzled with Yum Yum Sauce or your favorite condiment for extra flavor.
Notes
- Use day-old rice for better texture, as freshly cooked rice can be too sticky.
- Feel free to add other vegetables like bell peppers or green onions for variation.
- Adjust soy sauce quantity according to your sodium preference.
- For a spicier version, add chili flakes or Sriracha sauce.
- Yum Yum Sauce is optional but adds a nice creamy, tangy flavor if desired.
