Ingredients
- 6 slices white or whole wheat bread
- 6 large eggs
- 6 oz. deli ham or any leftover ham, chopped
- 3 oz. cheddar cheese (approximately 6 slices, 0.5 oz each)
- 3 teaspoons butter
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat Oven: Preheat your oven to 350 degrees F (175 degrees C). Locate a muffin tin and find a cookie cutter around 3 to 3.5 inches in diameter that fits into the muffin cups.
- Cut Bread Circles: Using the cookie cutter, cut a circle out of the center of each bread slice to create the bread base for the bundles.
- Prepare Bread Medallions: Roll the cut bread circles flat using a rolling pin. Spread butter evenly on each medallion and season with salt, pepper, and garlic powder for added flavor.
- Place Bread in Muffin Tin: Grease the muffin tin cups well, then press each buttered bread circle into a cupcake cup, forming a small crust.
- Bake Bread Crusts: Bake the bread-lined muffin cups for 6 to 8 minutes until the bread edges turn a nice golden brown. Remove from oven.
- Add Ham: Place about half an ounce (approximately one tablespoon) of chopped deli ham at the bottom of each baked bread crust.
- Add Egg: Carefully crack one egg into each bread and ham-lined muffin cup. Season eggs with salt and pepper to taste.
- Top with Cheese: Cover each egg with a half-ounce slice of cheddar cheese.
- Bake Bundles: Return the muffin tin to the oven and bake for about 25 minutes, or until the eggs are fully cooked and the cheese has melted beautifully.
Notes
- Use either white or whole wheat bread based on your preference.
- Make sure to grease the muffin tin thoroughly to avoid sticking.
- If you prefer a runnier yolk, reduce baking time slightly and check frequently.
- You can substitute ham with cooked bacon, sausage, or vegetables for a different flavor.
- Prepare these bundles in advance and reheat gently for a quick breakfast on busy mornings.
