Description

A refreshing and easy-to-make Fresh Cucumber Caprese Salad featuring crisp cucumber, juicy cherry tomatoes, and creamy fresh mozzarella, all tossed in a vibrant basil and oregano balsamic dressing. Perfect as a light appetizer or a healthy side dish.

Ingredients

Scale

Salad

  • 1 cucumber, peeled and diced
  • 1½ cups cherry tomatoes, quartered
  • 8 oz fresh mozzarella, torn or sliced
  • ½ large red onion, chopped

Dressing

  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon dried oregano
  • 1 tablespoon dried basil
  • Salt and pepper to taste

Instructions

  1. Prepare the dressing: In a mixing bowl, whisk together olive oil, balsamic vinegar, dried oregano, dried basil, salt, and pepper until the mixture is well combined and emulsified.
  2. Prepare the vegetables: Peel the cucumber and fork-score it for added texture, then dice it into bite-sized pieces. Quarter the cherry tomatoes and chop the red onion finely to ensure balanced flavors in every bite.
  3. Combine salad ingredients: Add the diced cucumber, quartered cherry tomatoes, and chopped red onion into the bowl with the dressing. Tear or slice the fresh mozzarella into bite-sized pieces and add them to the bowl as well.
  4. Toss the salad: Gently toss all the ingredients together, making sure that every piece is well coated with the flavorful dressing without breaking the delicate mozzarella.
  5. Serve: Serve the Fresh Cucumber Caprese Salad immediately, either chilled or at room temperature, as a fresh, light appetizer or side dish.

Notes

  • For extra freshness, chill the salad in the refrigerator for 15 minutes before serving.
  • Use fresh mozzarella for the best creamy texture and flavor.
  • Adjust salt and pepper according to your taste preferences.
  • Can be garnished with fresh basil leaves for additional aroma.
  • This salad is best enjoyed on the day it is made for optimal freshness.
