Salmon and Marinade

  • 1 pound skinless salmon fillets, cut into 1-inch cubes
  • 1/4 cup honey
  • 3 tablespoons soy sauce (low-sodium preferred)
  • 2 cloves garlic, minced

  • 1 tablespoon lemon juice
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Prepare the marinade and marinate the salmon: In a small bowl, whisk together honey, soy sauce, minced garlic, olive oil, lemon juice, black pepper, and optional red pepper flakes. Place the salmon cubes in a shallow dish or zip-top bag and pour half of the marinade over them. Gently toss to coat all the pieces evenly. Cover and refrigerate for 15 to 30 minutes to allow the flavors to infuse.
  2. Cook the salmon bites: Heat a nonstick skillet over medium heat. Add the marinated salmon pieces, discarding the used marinade from the marinating process. Cook the salmon for 2 to 3 minutes per side, until they turn golden brown and are cooked through.
  3. Simmer the glaze: Pour the remaining half of the unused marinade into the skillet with the salmon. Let it simmer for 1 to 2 minutes, spooning the sauce over the salmon pieces. This thickens the sauce into a glossy glaze that coats the salmon beautifully.
  4. Garnish and serve: Remove the skillet from heat. Sprinkle sliced green onions and sesame seeds over the salmon bites for added flavor and crunch. Serve immediately over rice, noodles, or steamed vegetables for a delicious complete meal.

Notes

  • For crispier edges, lightly dredge the salmon pieces in cornstarch before pan-frying.
  • This recipe can also be cooked in an air fryer: cook at 400°F (200°C) for 8 to 10 minutes, shaking the basket halfway through.
  • Use low-sodium soy sauce or gluten-free soy sauce if preferred to control sodium and gluten content.
