Instructions
- Sauté Aromatics: Heat olive oil in a large pot over medium heat. Add sliced onion and minced garlic and sauté until soft and fragrant, about 3-5 minutes.
- Add Vegetables: Stir in the diced potatoes, sliced carrot, and chopped red bell pepper. Cook for about 5 minutes, stirring occasionally, allowing the vegetables to begin softening.
- Incorporate Spices: Add ground cumin, ground coriander, smoked paprika, turmeric, salt, and black pepper to the pot. Stir well to coat the vegetables evenly with the spices.
- Add Broth and Chickpeas: Pour in the vegetable broth and add the drained chickpeas. Stir gently to combine all ingredients thoroughly.
- Simmer: Cover the pot with a lid and reduce the heat to low. Let the tagine simmer gently for 30 to 40 minutes, or until the potatoes are tender and the flavors have melded together.
- Adjust Seasoning: Taste the tagine and adjust salt and pepper as needed to suit your preference.
- Garnish and Serve: Serve the tagine warm, garnished with fresh cilantro or parsley and lemon wedges on the side for added brightness.
