Ingredients
Scale
Crust and Layers
- 24 chocolate graham crackers or chocolate wafer cookies
- 2 cups fresh raspberries
Cream Cheese Filling
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 16 oz whipped topping, divided
Chocolate Ganache
- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy cream
Instructions
- Prepare Cream Cheese Mixture: In a bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth. Gently fold in half of the whipped topping to maintain a light, fluffy texture. Chill the mixture to set while preparing the layers.
- Layer Base Cookies: In a 9×13-inch dish, arrange the chocolate cookies in a single layer to fully cover the bottom, creating the crust of the dessert.
- First Cream and Raspberry Layer: Spread half of the chilled cream cheese mixture evenly over the cookie layer. Press half of the fresh raspberries evenly onto the cream to ensure the berry flavor permeates the layer.
- Add Second Cookie Layer and Cream: Place another layer of chocolate cookies over the raspberries. Spread the remaining cream cheese mixture on top, then layer with the remaining raspberries.
- Top with Whipped Topping: Spread the remaining whipped topping evenly over the last berry layer for a smooth and creamy finish.
- Make Ganache: In a saucepan, heat the heavy cream until steaming but not boiling. Pour the hot cream over the chocolate chips in a heatproof bowl. Let it sit for 2 minutes to melt the chocolate, then stir until smooth and glossy.
- Finish with Ganache: Allow the ganache to cool slightly so it thickens but is still pourable, then drizzle or spread it over the whipped topping layer to complete the dessert.
- Chill to Set: Refrigerate the assembled dessert for at least 4 hours, preferably overnight, to allow the layers to set firmly and flavors to meld.
- Serve: Before serving, garnish with extra fresh raspberries and a light dusting of powdered sugar for an elegant presentation. Slice into squares and enjoy.
Notes
- Use fresh ripe raspberries for the best flavor and color contrast.
- The dessert needs to chill for several hours to set properly, so plan ahead.
- For a smoother ganache, do not overheat the cream and stir gently when combining with chocolate chips.
- Chocolate wafer cookies can be substituted with chocolate graham crackers if preferred.
- This dessert is best served cold and kept refrigerated until serving.
