Description

These Sourdough Cheesy Breadsticks are a perfect blend of tangy sourdough flavor and gooey cheeses. Crispy on the outside and soft inside, they make an ideal appetizer or snack. Made with sourdough discard, mozzarella, and parmesan, these breadsticks are easy to prepare with a quick rise and baked to golden perfection.

Ingredients

Scale

Dough Ingredients

  • 3/4 cup warm water
  • 1 teaspoon active dry yeast
  • 1 teaspoon sugar
  • 1 tablespoon olive oil
  • 1/2 cup sourdough discard
  • 2 1/4 cups all-purpose flour

Topping Ingredients

  • 2 tablespoons melted butter
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 1 teaspoon garlic salt
  • 1 teaspoon garlic powder
  • 1 teaspoon dried herbs (such as Italian seasoning or oregano)

Instructions

  1. Activate Yeast: In a stand mixer bowl, combine warm water, active dry yeast, and sugar. Let the mixture sit undisturbed for about 5 minutes until it becomes foamy, indicating the yeast is active.
  2. Make Dough: Add garlic salt, olive oil, and sourdough discard to the yeast mixture. Using the dough hook attachment on low speed, gradually mix in the all-purpose flour until a smooth dough forms.
  3. First Rise: Transfer the dough to a greased bowl and cover with plastic wrap. Place it in a warm spot and allow it to rise for approximately 20 minutes, until slightly puffed.
  4. Shape Dough: Roll out the dough on a floured surface into a large rectangle shape. Transfer this rectangle to a greased baking sheet.
  5. Add Toppings: Brush the dough evenly with melted butter. Sprinkle garlic powder, dried herbs, shredded mozzarella, and grated parmesan cheese over the top.
  6. Second Rise and Preheat Oven: Let the dough rise again in the baking sheet for an additional 15 minutes while preheating the oven to 400°F (200°C).
  7. Bake: Bake the breadsticks on the lowest oven rack for 15-20 minutes, until the top is golden brown and the cheese is melted and bubbly.
  8. Serve: Remove from oven and cut into strips. Serve warm for the best taste and texture.

Notes

  • You can substitute sourdough discard with a similar amount of active sourdough starter if desired.
  • For extra flavor, add finely chopped garlic or fresh herbs to the dough.
  • If you prefer crispier breadsticks, bake a few extra minutes but watch carefully to avoid burning.
  • Store leftovers in an airtight container and reheat in the oven to maintain crispiness.
  • For a dairy-free version, use vegan butter and cheese alternatives.
