Description

A delightful and easy-to-make Strawberry Crunch Cheesecake Salad combining creamy cheesecake-flavored dressing, fresh strawberries, and a crunchy golden cookie topping for a perfect balance of textures and flavors.

Ingredients

Scale

Strawberries

  • 1 lb fresh strawberries, sliced

Cheesecake Mixture

  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 8 oz whipped topping (Cool Whip or homemade)

Crunch Topping

  • 1 ½ cups crushed golden sandwich cookies (Golden Oreos or similar)
  • 2 tbsp melted butter
  • ½ cup mini marshmallows (optional)

Instructions

  1. Prepare the Crunch Topping: In a bowl, mix the crushed golden sandwich cookies with the melted butter until evenly combined. Spread this mixture onto a baking sheet and either let it dry at room temperature or bake it in a preheated oven at 350°F (175°C) for 5 minutes to crisp it up. Once done, set it aside to cool.
  2. Make the Cheesecake Mixture: In a large mixing bowl, beat the softened cream cheese with the powdered sugar and vanilla extract until the mixture is smooth and creamy. Gently fold in the whipped topping until fully combined and fluffy, creating a creamy cheesecake-flavored base.
  3. Assemble the Salad: Carefully fold the sliced fresh strawberries and mini marshmallows (if using) into the cheesecake mixture, ensuring the fruit and marshmallows are evenly coated without crushing the berries.
  4. Add the Crunch & Serve: Just before serving, sprinkle the prepared cookie crunch topping over the strawberry cheesecake mixture. Lightly mix to distribute the crunch evenly, leaving some on top for garnish. Serve immediately to enjoy the perfect balance of creamy, fruity, and crunchy textures.

Notes

  • The mini marshmallows are optional but add a fun soft texture to contrast the crunch.
  • For extra flavor, chill the salad for 30 minutes before serving, but add the crunch topping right before serving to maintain crispiness.
  • Use golden sandwich cookies like Golden Oreos for the best crunch and buttery flavor.
  • You can make your own whipped topping if desired, preferably homemade whipped cream.
  • Store leftovers covered in the refrigerator for up to 2 days but add the crunch topping fresh each time.
