Instructions
- Prepare Ingredients: Gather and chop all the vegetables including onion, celery, garlic, ginger, bok choy, and mushrooms.
- Heat Oil: Place a large pot over medium heat and add the oil if using, warming it up for sautéing the aromatics.
- Sauté Aromatics: Add the diced onion to the pot and cook until translucent, about 3 to 4 minutes. Then add the minced garlic and grated ginger, cooking briefly until fragrant.
- Add Spices and Stock: Stir in 1 teaspoon of turmeric powder and some black pepper, then pour in the vegetable stock and add bay leaves. Bring the mixture to a gentle boil.
- Add Vegetables and Noodles: Add the chopped celery, mushrooms, bok choy, and rice noodles to the pot. Season with salt and optional chili flakes or sauce, then reduce the heat to allow the soup to simmer.
- Simmer Soup: Let the soup simmer gently for about 15 minutes until the noodles are soft and the vegetables are tender. Remove the bay leaves.
- Garnish and Serve: Finish the soup with a splash of fresh lime juice and a sprinkle of chopped cilantro before serving.
