Description

Winter Warmer Soup is a comforting and nourishing vegetarian soup packed with fresh vegetables, fragrant spices, and delicate rice noodles. This easy-to-make recipe features a turmeric-infused vegetable broth combined with garlic, ginger, bok choy, and mushrooms, perfect for chilly days or when you need a wholesome, warming meal.

Ingredients

Scale

Soup Base

  • 1 tablespoon oil (optional)
  • 2-3 bay leaves
  • 4 cups low sodium vegetable stock
  • 1 teaspoon turmeric powder
  • Salt and pepper to taste

Vegetables & Aromatics

  • 5-6 garlic cloves, minced
  • 1-2 inches grated ginger root
  • 2 stalks celery, chopped
  • 4 baby bok choy, chopped
  • 1 onion, diced
  • 2 cups mushrooms, quartered

Others

  • 1 cup thin rice noodles
  • Fresh cilantro for garnish
  • Lime juice for garnish

Instructions

  1. Prepare Ingredients: Gather and chop all the vegetables including onion, celery, garlic, ginger, bok choy, and mushrooms.
  2. Heat Oil: Place a large pot over medium heat and add the oil if using, warming it up for sautéing the aromatics.
  3. Sauté Aromatics: Add the diced onion to the pot and cook until translucent, about 3 to 4 minutes. Then add the minced garlic and grated ginger, cooking briefly until fragrant.
  4. Add Spices and Stock: Stir in 1 teaspoon of turmeric powder and some black pepper, then pour in the vegetable stock and add bay leaves. Bring the mixture to a gentle boil.
  5. Add Vegetables and Noodles: Add the chopped celery, mushrooms, bok choy, and rice noodles to the pot. Season with salt and optional chili flakes or sauce, then reduce the heat to allow the soup to simmer.
  6. Simmer Soup: Let the soup simmer gently for about 15 minutes until the noodles are soft and the vegetables are tender. Remove the bay leaves.
  7. Garnish and Serve: Finish the soup with a splash of fresh lime juice and a sprinkle of chopped cilantro before serving.

Notes

  • This soup is naturally vegetarian and can be made vegan by ensuring the vegetable stock does not contain animal products.
  • Adjust turmeric and chili flakes according to your spice preference.
  • Use fresh lime juice at the end for a bright, fresh flavor.
  • Rice noodles cook quickly; ensure they do not overcook to avoid becoming mushy.
  • Low sodium vegetable stock is recommended to control the saltiness.
